Corn this time of year (August) is sublime! I don't even like to cook it because it tastes so good raw, but if you want to make a hearty batch of sumpin', this is sure to please. I recommend melting in 1/2 vegan bouillon cube instead of bacon, and spice to taste with cumin, smoked paprika and cayenne. Instead of stirring in dairy, add fried manchego when plating. Frying gets the grease out while retaining flavor, if you've ever had cheese drip over while preparing eggs, then you know how to fry mangego, just cook until brown on one side.
